Explore an Abandoned Colorado Restaurant in the Middle of Nowhere

A building in a very rural part of Colorado appears to have, at one time, been a restaurant but is now totally abandoned. We certainly don't recommend finding it yourself as exploring these types of places can be extremely dangerous, but you can keep scrolling to take a virtual tour.
Where is this Abandoned Property in Colorado?
Unfortunately, we don't know precisely where this abandoned building is, but we have some clues. The videographer who explored the property stated in a comment that he doesn't disclose locations of places like this out of respect for the property, noting that sometimes people "destroy them" after finding out where they are.
However, the property is definitely in a very rural part of Colorado with mountains surrounding it that resemble the San Luis Valley. In addition, the sign of the building which was likely a restaurant is almost unreadable, but you can make out the words, "Sangre de Cristo."
What's the Abandoned Colorado Property Like?
The property has a large, Southwest adobe-style building still standing that appears to have once been a restaurant. The only way to get to it is via a dirt road, and much of the building has been claimed by the elements.
However, one section of the building is puzzling as it appears that a project was started in order to renovate it and possibly turn it into a residence, but that has all since been abandoned.
