Head to nearly any diner that serves breakfast and you will be able to order a Denver omelet. Even though it may not be on the menu, you can still get it made, especially if you are in Colorado.

The Denver Omelet is a simple, yet flavorful dish that is a favorite among Coloradans and fans of breakfast food. With the COVID-19 pandemic still in full swing, you may not be able to get yourself a Denver Omelet on a whim, but you can make it at home.

It is simple to make and only requires a few ingredients:

  • 3 eggs
  • 1 tablespoon butter
  • 1/4 cup of diced ham
  • 2 tablespoons of diced green pepper
  • 2 tablespoons of diced onion
  • 1/3 cup of shredded cheddar cheese
  • Salt and pepper to taste

The recipe from All Recipes calls for 1/3 cup of cheddar cheese, but if you are like me, you prefer your Denver Omelet cheesy, so feel free to add more to your liking.

Start off by cracking your eggs in a bowl and beating them just until they are mixed.

Melt your butter in a pan on medium-high heat and add the ham, green pepper, and onion. Cook until the onions start to get soft and the ham browns.

Drop the heat to medium-low and add the eggs to the pan, then mix the contents of the pan quickly and allow the eggs to cook.

Add your cheese to the omelet and cook for about 5 minutes until the top is a bit wet, but not runny.

Fold the omelet in half in the pan and then transfer to a plate. Enjoy.
