Colorado Restaurant Tucked Away Beneath 181-Foot Waterfall
Restaurant 1858 is a fine-dining restaurant on the banks of the 181-foot Broadmoor Seven Falls in Colorado Springs.
Seven Falls Park and Restaurant 1858 are gearing up to open February 28, 2020, and I couldn't be more excited. This seasonal restaurant gives you a unique fine-dining mountain experience you can't get anywhere else.
Situated on the banks of Seven Falls and taking it's name from the Gold Rush era, Restaurant 1858 offers Colorado cuisine in a rustic setting. They use reclaimed wood with "mining lantern" inspired light fixtures to set the mood.

Chef de Cuisine, Rocio Neyra Prado, oversees a menu that showcases traditional Rocky Mountain flavors and takes its cue from the heritage of the Old West. The menu’s variety of German, French, and Creole dishes are inspired by the immigrants who traveled west to seek their fortunes in the gold rush, making Restaurant 1858 the culinary melting pot of Cheyenne Canyon.
