Essentially, The Slopper is an open-faced cheeseburger that is given a good soaking in Pueblo green chile, onions, extra cheese, and some type of potato, usually french fries.

The Slopper has its roots in Pueblo, Colorado largely due to the town's obsession with green chiles. For example, every summer thousands upon thousands of people gather in downtown Pueblo to attend the Chile and Frijole festival. Picture this - a county fair with live music, fair food, and chile roasters giving the entire town a tasty aroma or roasted green chiles; that's the Chile and Frijole Festival.

However, the two most famous restaurants in Pueblo when it comes to the Slopper are heritage staples in the town and they are Gray's Coors Tavern and the Sunset Inn.
