Colorado probably has 100s of Mexican restaurants; Northern Colorado definitely has its fair share. One, that many may not have even heard of, has been around since 2004; in their 21st year, the celebrated opening their second location.

Having just one location of a restaurant can be a daily struggle, with the hours, dealing with employees/customers, and the costs always seeming to get higher. To open a second location, from the ground up, can take a lot of courage. While their original location is legendary, their second one really stands out as a "destination" dining experience.

According to the Greeley Tribune, George Orozco opened Don Juan Mexican Restaurant in LaSalle in 2004. Don Juan is one of three Mexican restaurants in LaSalle (Don Juan, The Armadillo, and Farmer's Inn;) for all three to succeed must mean that they are all well-liked and have great food. I dined at Don Juan Mexican Restaurant for the first time, at their second location which is in Pierce; I thought it was delicious.

Being the only (as of October 2025) restaurant in Pierce, Don Juan did it right, by creating their second spot from the ground up; there was nothing but a field before Don Juan went in at 500 1st Street. You can tell they had a great plan and stuck with it. The new place (which opened in August of 2025) is bright, has plenty of seating, a great bar (including garage doors that open to let the fresh air in,) and great authentic décor.
