New Restaurant to Replace Old Betta Gumbo Space in Windsor

Betta Gumbo announced that they were closing their location on Windsor's iconic Main Street on Halloween of last year. Betta Gumbo in Windsor was the last Colorado location for the restaurant chain.

Since then, the restaurant has closed and the building has remained empty. I was on a walk to my favorite coffee shop in Windsor when I discovered that a brand-new restaurant would be coming to the old Betta Gumbo location in Northern Colorado.

On my walk to my coffee shop, I noticed very subtle signs. I walk by the old Betta Gumbo location nearly daily and I just noticed the signs.

The signs say this. "New Taste In Town!! Indian Street Food Opening Soon".

Now, we have quite a few questions. Is this going to be the name of the restaurant? Or is this simply the style of cuisine that will be coming to Main Street in Windsor?

Our guess is that it is simply the style of cuisine.

There were various signs posted in the windows, however, they did not reveal when Indian street food will be coming to town.

I took a peak inside and there did not seem to be anything set up. So it might be a while until we have an official opening date. It is great to see that a restaurant is coming to the old Betta Gumbo location and we are excited to try it once it is open.
