Fall is in the air of Colorado, and I couldn't be happier, as it is my favorite season. Crisp air, the amazing fall colors, and wearing hoodies are all part of the fall season experience in Colorado.

Plus, the food is pretty darn good, too. If you are new to Colorado or have maybe been living under a rock and don't know about green chile, you should know, it's a way of life for us Coloradans.

Fall Means Green Chile Season in Colorado

Every year, I stock up on roasted green chiles in the fall and use them in pretty much every dish. This year's haul was one of the biggest yet, with around 65 Ziploc bags filled with a dozen chiles each.

These chiles have a distinct taste, and one of the very best ways to use them is in pork green chile. Nearly every Mexican restaurant in Colorado has its own take on green chile. Some are scorching hot, others are mild, but one thing that each restaurant has in common is that the pork green chile is bursting with flavor at every bite.

I have been making pork green chile for years, but it seems as if something is missing every time I make it. That is, until recently, with a recipe that I found on YouTube. This recipe took home top honors at the Pueblo Chile and Frijoles festival in 2023, so you know it has to be good.

Brad Bowers posted the video on YouTube in 2024, and I knew that I had to give it a try. Let me tell you this, it is exactly what I have been looking for when it comes to making my green chile at home for years.

The recipe yields approximately five quarts of green chile. Of course, you can always adjust the ingredients to make more or less, depending on how much you want to prepare.

Brad Bowers Colorado Green Chile Recipe

These are the ingredients you need to make killer Colorado green chile at home:

  • 1 lb. diced pork
  • 4 oz. white onion, chopped
  • 5 cloves of garlic
  • 1 tbsp cooking oil
  • 1 tsp ground black pepper
  • 4 cups chicken stock
  • 1.2 cup all-purpose flour
  • 1 can fire-roasted, diced tomatoes - 14.5 oz.
  • 4 lbs. roasted green chiles - peeled, seeded, and chopped
  • 1 tbsp salt - to taste
